🥬 Creamy Spinach Chicken Casserole

Ingredients

For the chicken

  • 700 g (1½ lb) boneless, skinless chicken breasts or thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil

For the creamy spinach sauce

  • 2 tablespoons butter
  • 4 cloves garlic, finely minced
  • 250–300 g fresh spinach, or about 200 g frozen spinach
  • 1 cup heavy cream
  • 115 g (4 oz) cream cheese, softened
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon red chili flakes, optional
  • ½ cup chicken broth or milk, if the sauce needs thinning

Step 1: Prepare the chicken

Preheat your oven to 190°C / 375°F.

Cut the chicken breasts into medium-sized bite-size pieces. This helps them cook evenly and makes the casserole easier to serve.

Place the chicken in a bowl and add:

  • Salt
  • Black pepper
  • Paprika
  • Italian seasoning
  • Garlic powder

Mix thoroughly until every piece is well coated.

Step 2: Lightly brown the chicken

Heat the olive oil in a large oven-safe skillet over medium-high heat.

Add the seasoned chicken and cook for approximately 3–4 minutes per side, just until the outside develops a light golden color.

The chicken does not need to be completely cooked at this stage because it will finish cooking in the oven.

Remove the chicken and set it aside.

Step 3: Cook the spinach

Reduce the heat to medium and add the butter to the same skillet.

Add the minced garlic and cook for approximately 30–45 seconds until fragrant.

Add the fresh spinach.

Cook for 2–3 minutes, stirring frequently, until the spinach wilts down.

If you’re using frozen spinach, thaw it completely and squeeze out as much water as possible before adding it. Excess water can make your casserole runny.

Step 4: Make the creamy sauce

Add the heavy cream to the skillet.

Stir gently, scraping up any flavorful browned bits from the bottom of the pan.

Add the softened cream cheese and stir until it melts into the cream.

Now add:

  • Parmesan
  • ½ cup mozzarella
  • Italian seasoning
  • Black pepper
  • Salt
  • Red chili flakes, if using

Stir continuously over low-medium heat until you have a smooth, thick, creamy sauce.

If the sauce becomes too thick, add a little chicken broth or milk, one tablespoon at a time.

Step 5: Combine the chicken and spinach

Return the browned chicken to the skillet.

Stir everything together so the chicken is completely coated in the creamy spinach sauce.

Taste the sauce and adjust the salt, pepper, or chili flakes if needed.

Step 6: Add the cheese topping

Spread the chicken and spinach mixture evenly in the skillet.

Sprinkle the remaining ½ cup mozzarella over the top.

For an extra cheesy casserole, you can add another tablespoon or two of Parmesan.

Step 7: Bake

Place the skillet in the preheated 190°C / 375°F oven.

Bake uncovered for approximately 20–25 minutes, until:

  • The chicken is completely cooked
  • The sauce is bubbling around the edges
  • The mozzarella is melted
  • The top is lightly golden

For an extra-browned cheesy top, switch to the broiler/grill for 1–2 minutes at the end. Watch it carefully because cheese can burn quickly.

Step 8: Rest before serving

Remove the casserole from the oven and let it rest for 5–10 minutes.

This allows the creamy sauce to thicken slightly and helps the chicken retain its juices.
