🍗 Ultimate Creamy Tuscan Chicken & Carrots — One Pan
🛒 Ingredients
For the chicken
- 4 boneless, skinless chicken breasts or 5–6 chicken thighs
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- 2 tablespoons olive oil
- 1 tablespoon butter
For the vegetables & sauce
- 4–5 medium carrots, peeled and sliced diagonally
- 4 cloves garlic, finely minced
- 1 small onion, finely chopped
- ½ cup sun-dried tomatoes, sliced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- ½ teaspoon chili flakes, optional
- 1 teaspoon Italian seasoning
- ½ teaspoon black pepper
- Salt, to taste
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil, optional
- ½ lemon, optional
👩🍳 Step-by-Step Instructions
1. Prepare the chicken
If your chicken breasts are very thick, slice them horizontally to make thinner cutlets. This helps them cook evenly and stay juicy.
Pat the chicken dry with paper towels.
Season both sides generously with:
- Salt
- Black pepper
- Paprika
- Italian seasoning
Press the seasoning into the chicken so it sticks well.
2. Brown the chicken
Place a large, deep skillet over medium-high heat.
Add the olive oil and butter.
Once the butter melts and the pan is hot, carefully place the chicken into the skillet.
Cook for about 4–5 minutes on the first side, without moving it too much.
Flip and cook another 3–4 minutes.
You don’t necessarily need to cook the chicken completely through at this stage—it will finish cooking in the sauce.
Remove the chicken from the pan and place it on a plate.
Tip: Don’t clean the skillet. Those browned bits left on the bottom are packed with flavor.
3. Cook the carrots
Add the sliced carrots directly to the same skillet.
Cook for about 5–7 minutes, stirring occasionally.
You want the carrots to begin softening and develop a little color.
If the pan looks dry, add another small drizzle of olive oil.
4. Add the onion and garlic
Add the chopped onion to the carrots.
Cook for approximately 2–3 minutes, until the onion begins to soften.
Add the minced garlic and cook for another 30–60 seconds.
Don’t let the garlic burn.
5. Add the sun-dried tomatoes
Stir in the sliced sun-dried tomatoes.
Cook for about 1 minute.
The tomatoes add a wonderful combination of sweetness, acidity, and savory flavor to the creamy sauce.
If you like a little heat, add the chili flakes here.
6. Deglaze the pan
Pour in the chicken broth.
Using a wooden spoon or spatula, scrape the bottom of the skillet.
This is important because all those caramelized brown bits from the chicken will dissolve into the broth and become part of the sauce.
Let everything simmer for about 2–3 minutes.
7. Make the creamy Tuscan sauce
Reduce the heat to medium-low.
Pour in the heavy cream.
Add:
- 1 teaspoon Italian seasoning
- Black pepper
- A small pinch of salt
Stir everything together.
Allow the sauce to gently simmer for about 3–4 minutes.
Don’t boil it aggressively—the cream can separate.
8. Add Parmesan
Gradually sprinkle in the freshly grated Parmesan while stirring.
The cheese will melt into the cream and thicken the sauce.
You should end up with a smooth, creamy sauce that coats the back of a spoon.
Important: Freshly grated Parmesan melts much better than pre-shredded Parmesan.
9. Add the spinach
Add the fresh spinach handful by handful.
Stir gently until it wilts into the sauce.
This usually takes only 1–2 minutes.
The spinach will look like a lot at first, but it reduces considerably.
10. Return the chicken to the pan
Place the browned chicken back into the skillet.
Spoon some of the creamy Tuscan sauce over the chicken.
Arrange the carrots around the chicken.
Cover the skillet with a lid and reduce the heat to low.
Cook for approximately 8–12 minutes, depending on the thickness of your chicken.
The chicken should reach an internal temperature of 165°F / 74°C at the thickest part.
11. Finish the sauce
Once the chicken is cooked, taste the sauce.
Adjust with:
- More salt if needed
- Extra black pepper
- Chili flakes for heat
- A little lemon juice for brightness
A small squeeze of fresh lemon at the end is especially good because it balances the richness of the cream and Parmesan.
12. Garnish and serve
Turn off the heat.
Sprinkle the dish with freshly chopped parsley and basil if using.
For an especially luxurious finish, add a little extra Parmesan on top.
Serve immediately while the sauce is hot and creamy.

🔥 Tips for the Best Results
Don’t overcrowd the chicken. Brown it in batches if your skillet is small.
Use chicken thighs for extra juiciness. Boneless skinless thighs are more forgiving and work beautifully with this recipe.
Don’t boil the cream. Keep the sauce at a gentle simmer so it stays smooth.
Use freshly grated Parmesan. It gives the sauce a much better texture.
Don’t overcook the carrots. They should be tender but still have a little bite.
Want it extra creamy? Add another ¼ cup of heavy cream or 2–3 tablespoons of cream cheese.
Want more Tuscan flavor? Add sliced mushrooms along with the carrots and a little extra sun-dried tomato.
For extra heat: Add ½–1 teaspoon red pepper flakes.
The finished dish should have tender, juicy chicken, sweet roasted carrots, wilted spinach and sun-dried tomatoes covered in a thick, garlicky Parmesan cream sauce.
