For the lasagna:

  • 8–10 regular dry lasagna noodles — do not boil them
  • 1 cup (250 g) ricotta cheese
  • 2 cups (200 g) shredded mozzarella cheese
  • ½ cup (50 g) grated Parmesan cheese
  • 1 egg
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Optional:

  • Fresh parsley or basil
  • Extra Parmesan for serving
  • Sliced mushrooms
  • Spinach
  • Bell peppers

Step 1: Prepare the cheese mixture

In a bowl, combine:

  • Ricotta
  • Egg
  • ½ cup Parmesan
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Mix everything together until smooth and well combined.

Set it aside while you prepare the sauce.


Step 2: Brown the beef

Place a large deep oven-safe skillet or sauté pan over medium-high heat.

Add the ground beef and cook for about 5–7 minutes, breaking it apart with a wooden spoon.

Cook until the beef is browned and no longer pink.

If there is a lot of excess fat, carefully drain most of it.


Step 3: Add the onion and garlic

Add the chopped onion to the beef.

Cook for approximately 3–4 minutes, stirring occasionally, until the onion becomes soft.

Add the minced garlic and cook for another 30–60 seconds.

Be careful not to burn the garlic.


Step 4: Make the tomato sauce

Add:

  • Marinara/pasta sauce
  • Crushed tomatoes
  • ½ cup water or beef broth
  • Italian seasoning
  • Salt
  • Black pepper
  • Chili flakes, if using

Stir everything together.

Bring the sauce to a gentle simmer and cook for about 5 minutes.

Important:

Because the noodles are going into the pan dry, you need enough liquid in the sauce to cook them. Don’t make the sauce too thick at this stage.


Step 5: Break the lasagna noodles

Take the dry, uncooked lasagna noodles and break them into large pieces.

You don’t need perfectly sized pieces. Breaking each noodle into about 2–3 pieces makes it easier to fit them into the pan.


Step 6: Add the first layer of noodles

Reduce the heat to low.

Spread some of the meat sauce evenly across the bottom of the pan.

Place a layer of the dry lasagna noodle pieces over the sauce.

Try to cover most of the surface, but don’t worry if there are small gaps.


Step 7: Add cheese

Spoon some of the ricotta mixture over the noodles.

Don’t worry about spreading it perfectly. Small spoonfuls distributed around the pan work well.

Sprinkle some mozzarella over the top.


Step 8: Repeat the layers

Continue layering:

Meat sauce → dry noodles → ricotta mixture → mozzarella

Repeat until you’ve used most of your ingredients.

Finish with a generous layer of meat sauce and mozzarella on top.

Sprinkle the remaining Parmesan over everything.

Very important:

Make sure the dry noodles are covered with sauce. Any exposed noodle pieces may remain hard because they aren’t surrounded by enough moisture.


Step 9: Cover and cook

Cover the skillet tightly with a lid or aluminum foil.

Place it over low to medium-low heat.

Cook for approximately 25–30 minutes.

The steam trapped under the lid helps cook the noodles.

Avoid lifting the lid repeatedly because you want to keep that steam inside.


Step 10: Check the noodles

After about 25 minutes, carefully lift the lid and test one of the noodles with a fork.

It should be tender and easy to cut.

If the noodles are still firm, add ¼ cup water or broth around the edges of the pan, cover again, and cook for another 5–10 minutes.

The exact cooking time can vary depending on the type and thickness of the noodles.


Step 11: Melt and brown the cheese

Once the noodles are tender, remove the lid.

If your skillet is oven-safe, place it under a preheated broiler/grill for 2–4 minutes, just until the mozzarella becomes bubbly and lightly browned.

Watch it carefully because cheese can burn quickly.

If you don’t want to use the oven, simply cover the pan again for 2–3 minutes until the cheese melts completely.


Step 12: Rest the lasagna

Turn off the heat and let the lasagna rest for 10 minutes before serving.

This is important because the sauce thickens as it cools slightly, and the layers become easier to serve.

Cut or scoop the lasagna directly from the pan.

Top with:

  • Fresh parsley
  • Fresh basil
  • Extra Parmesan
  • A little black pepper

Dry noodles need moisture to cook.

The trapped steam is essential for cooking the noodles.

3. Use regular dry lasagna noodles.
You don’t need to boil them first. If you specifically use oven-ready/no-boil noodles, they can also work, but they may require slightly different amounts of liquid.

4. Don’t rush the cooking.
Keep the heat moderate or low. High heat can burn the sauce on the bottom before the noodles become tender.

5. Let it rest.
Those 10 minutes make a big difference in texture.
