For the homemade meat sauce

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped

  • 500 g (1.1 lb) ground beef
  • 1 teaspoon salt

  • 1 teaspoon Italian seasoning
  • ½ teaspoon red chili flakes — optional
  • 2 tablespoons tomato paste
  • 800 g (28 oz) crushed tomatoes
  • 400 g (14 oz) tomato sauce or passata
  • 1 teaspoon sugar, optional
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ cup water or beef broth

For the cheese filling

  • 500 g (16 oz) ricotta cheese
  • 1½ cups shredded mozzarella
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley — optional

For the lasagna

  • 12–14 lasagna noodles
  • 1½–2 cups shredded mozzarella for topping
  • ¼ cup grated Parmesan for topping

1. Make the homemade meat sauce

Heat 2 tablespoons olive oil in a large saucepan or deep skillet over medium heat.

Add the minced garlic and cook for another 30–60 seconds. Be careful not to burn the garlic.

Add the beef

2. Cook the lasagna noodles

While the sauce is simmering, bring a large pot of generously salted water to a boil.

Cook the lasagna noodles according to the package directions, but try to cook them until just al dente.

You don’t want them extremely soft because they’ll continue cooking in the oven.

Once cooked, drain the noodles carefully.

Lay them flat on a lightly oiled baking sheet or parchment paper so they don’t stick together.

Take a large baking dish, approximately 9×13 inches (23×33 cm).

Spread about 1 cup of the meat sauce over the bottom of the dish.

Place one cooked lasagna noodle flat on a clean work surface.

Sprinkle 1½–2 cups shredded mozzarella evenly over the roll-ups.

Then sprinkle the Parmesan on top.

8. Bake

Cover the baking dish loosely with aluminum foil.

Bake at 190°C / 375°F for about 25 minutes.

Then remove the foil.

Return the dish to the oven and bake for another 10–15 minutes, until:

  • The sauce is bubbling.
  • The cheese is completely melted.
  • The top is lightly golden.

For a more browned, bubbly cheese topping, switch the oven to broil/grill for 1–2 minutes at the end.

Watch it carefully because cheese can burn very quickly under the broiler.


9. Let it rest

Remove the lasagna roll-ups from the oven and let them rest for 10 minutes before serving.

This is important.

The cheese filling and sauce will be extremely hot immediately after baking, and resting allows everything to settle so the roll-ups hold their shape better.
