🧀 Cheesy Jalapeño Toast with Mozzarella

Serves: 4
Prep time: 10 minutes
Cook time: 8–12 minutes
Total: About 20 minutes

Ingredients

  • 4–6 slices of bread — white, sourdough, or French bread
  • 1 cup shredded mozzarella cheese
  • 1–2 fresh jalapeños, finely chopped
  • 2 tablespoons butter, softened
  • 1 tablespoon mayonnaise
  • 2 cloves garlic, finely minced
  • 1 tablespoon fresh coriander/cilantro, chopped
  • ½ teaspoon chili flakes — optional
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ½ teaspoon Italian seasoning or oregano
  • 1 tablespoon grated Parmesan — optional, but excellent for extra flavor

Step-by-step

1. Prepare the jalapeños 🌶️
Wash the jalapeños and slice them lengthwise. Remove the seeds and white inner membrane if you prefer a milder toast. For a stronger spicy flavor, leave some of the seeds in.

Finely chop the jalapeños and set them aside.

2. Make the buttery garlic spread 🧈
In a small bowl, combine:

  • softened butter
  • mayonnaise
  • minced garlic
  • chopped coriander
  • black pepper
  • salt
  • Italian seasoning
  • chili flakes, if using

Mix everything until you have a smooth, flavorful spread.

3. Add the jalapeños
Stir the chopped jalapeños into the garlic-butter mixture.

This gives every bite a combination of creamy butter, garlic, herbs, and fresh jalapeño rather than having the peppers concentrated in just one spot.

4. Prepare the bread 🍞
Place the bread slices on a baking tray.

Spread a generous layer of the jalapeño-garlic butter over each slice, making sure to cover the edges as well. The edges will become beautifully crisp and golden while the center stays soft.

5. Add plenty of mozzarella 🧀
Generously sprinkle shredded mozzarella over the top of each slice.

Don’t be shy with the cheese—the mozzarella should form a thick layer that melts into a stretchy, golden topping.

For even more flavor, sprinkle a little Parmesan and oregano over the mozzarella.

6. Toast until golden
Preheat your oven to 200°C / 400°F.

Place the tray in the oven and bake for approximately 7–10 minutes, or until the cheese has completely melted and the bread is crisp around the edges.

For a beautifully browned, bubbly top, switch to the broiler/grill setting for 1–2 minutes at the end. Keep a close eye on it because mozzarella can brown quickly.

7. Let it rest briefly
Remove the toast from the oven and allow it to cool for about 1–2 minutes.

This gives the melted cheese a chance to settle slightly while remaining wonderfully stretchy.

8. Serve immediately 😍
Cut the toast into halves or triangles and serve while it’s hot.

🔥 Extra tips for the BEST cheesy jalapeño toast

  • Use freshly shredded mozzarella for the best melt and stretch.
  • For extra crunch, brush a little butter on the underside of the bread before toasting.
  • For a spicier version, keep the jalapeño seeds or add a pinch of cayenne.
  • For a milder version, use pickled jalapeños instead of fresh ones.
  • Add a little cheddar alongside mozzarella for a stronger cheesy flavor.
  • A tiny drizzle of hot honey over the finished toast gives an amazing sweet-spicy contrast.
  • Don’t overbake—the goal is crisp bread + gooey cheese, not hard, dry toast.

🧀 The final result

You should end up with crunchy, golden bread topped with bubbling mozzarella, fragrant garlic butter, fresh jalapeño, herbs, and a gentle spicy kick. When you pull it apart, the mozzarella should stretch beautifully.

It’s perfect as a quick breakfast, evening snack, party appetizer, or side dish with soup or pasta.
