It makes about 6–8 servings.

- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes, optional
For the tomato sauce

- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon sugar, optional
- ½ cup water
You can also use about 4 cups of your favorite marinara sauce to make this recipe even easier.
For the three-cheese mixture
- 15 oz (425 g) ricotta cheese
- 1 large egg
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon black pepper
For assembling
- 9–12 lasagna noodles
- 2½–3 cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Extra chopped parsley or basil for garnish, optional
👩🍳 Step-by-Step Instructions
Step 1: Prepare the vegetables
Wash and chop all your vegetables before you begin.
Dice the onion, zucchini, carrot, and bell pepper into small pieces. Slice the mushrooms and roughly chop the spinach.
Try to keep the vegetables relatively small and similar in size so they cook evenly.
Step 2: Cook the vegetable filling
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add the chopped onion and carrot.
Cook for about 4–5 minutes, stirring occasionally, until the onion becomes soft.
Add the garlic and cook for another 30–60 seconds.
Next, add:
- Zucchini
- Bell pepper
- Mushrooms
- Salt
- Black pepper
- Italian seasoning
- Red pepper flakes, if using
Cook for approximately 6–8 minutes.
The vegetables should become tender, but don’t cook them until they’re completely soft because they will continue cooking inside the lasagna.
Add the spinach during the final 1–2 minutes.
Stir until the spinach wilts.
Remove the skillet from the heat and set the vegetables aside.
Important: If the vegetables release a lot of liquid, continue cooking for another minute or two until most of the excess moisture evaporates. This helps prevent watery lasagna.
🍅 Step 3: Make the tomato sauce
Heat 2 tablespoons of olive oil in a saucepan over medium heat.
Add the chopped onion and cook for 3–4 minutes.
Add the minced garlic and cook for about 30 seconds.
Add the tomato paste and stir it into the onions and garlic.
Cook for approximately 1 minute.
Now add:
- Crushed tomatoes
- Oregano
- Basil
- Salt
- Black pepper
- Sugar, if using
- ½ cup water
Stir everything together.
Bring the sauce to a gentle simmer.
Reduce the heat to low and cook for 15–20 minutes, stirring occasionally.
Taste the sauce.
If it’s too acidic, add a small amount of sugar. If it needs more flavor, add a little additional salt, pepper, oregano, or basil.
🧀 Step 4: Prepare the three-cheese mixture
In a medium bowl, combine:
- Ricotta
- 1 egg
- ½ cup Parmesan
- Italian seasoning
- Salt
- Black pepper
Mix thoroughly until everything is well combined.
The egg helps the ricotta mixture set nicely when the lasagna bakes.
Set the mixture aside.
🍝 Step 5: Cook the lasagna noodles
Bring a large pot of salted water to a boil.
Cook the lasagna noodles according to the package directions, usually around 8–10 minutes.
You want them al dente, meaning they should be cooked but still slightly firm.
Drain the noodles carefully.
Lay them flat on a baking sheet or clean surface so they don’t stick together.
Easy option:
If you’re using oven-ready/no-boil lasagna noodles, you can skip this step. Follow the package instructions and make sure your sauce is not too thick.
🔥 Step 6: Preheat the oven
Preheat your oven to:
375°F (190°C).
Lightly grease a 9 × 13-inch (23 × 33 cm) baking dish with olive oil or cooking spray.
🥘 Step 7: Start assembling the lasagna
Now comes the fun part!
Spread approximately ½–1 cup of tomato sauce over the bottom of the baking dish.
Don’t skip this layer—it helps prevent the noodles from sticking.
Place a layer of lasagna noodles over the sauce.
Depending on the size of your noodles, you may need 3–4 noodles.
Step 8: Add the ricotta
Spread approximately ⅓ of the ricotta mixture over the noodles.
Don’t worry if it doesn’t spread perfectly. You can use the back of a spoon or spatula to gently spread it.
Step 9: Add the vegetables
Spread approximately ⅓ of the cooked vegetable mixture over the ricotta.
Try to distribute the vegetables evenly from edge to edge.
Step 10: Add mozzarella
Sprinkle approximately ½–¾ cup shredded mozzarella over the vegetables.
Now you have your first complete layer.
🔄 Step 11: Repeat the layers
Repeat the same sequence:
Tomato sauce → noodles → ricotta → vegetables → mozzarella
Continue until you have used most of your ingredients.
A typical lasagna will have 3 layers of filling.
🧀 Step 12: Finish the top
For the final layer, place the remaining lasagna noodles on top.
Spread the remaining tomato sauce over the noodles.
Make sure the sauce covers most of the noodles so they don’t dry out during baking.
Then cover the top generously with the remaining mozzarella.
Finish with the remaining Parmesan cheese.
The top should look nicely covered with cheese.
🔥 Step 13: Cover and bake
Cover the baking dish tightly with aluminum foil.
Try to keep the foil from touching the cheese directly if possible.
Place the lasagna in the preheated 375°F (190°C) oven.
Bake for approximately:
25–30 minutes covered.
The sauce should be bubbling around the edges.
🧀 Step 14: Bake uncovered
Remove the aluminum foil.
Return the lasagna to the oven.
Bake for another:
15–20 minutes.
The cheese should be completely melted and golden brown in spots.
If you want a more deeply browned top, you can turn on the broiler/grill for 1–2 minutes at the end.
Watch it carefully because cheese can burn very quickly under a broiler.
⏰ Step 15: Let it rest
This step is very important.
Remove the lasagna from the oven and let it rest for 15–20 minutes before cutting.
If you cut it immediately, the layers may slide apart and the sauce will run everywhere.
Resting allows the cheese and sauce to set, giving you beautiful slices.
🌿 Step 16: Serve
Cut the lasagna into squares.
Garnish with:
- Fresh basil
- Fresh parsley
- A little extra Parmesan
- Black pepper
Serve warm.
Great side dishes
This lasagna pairs especially well with:
- Garlic bread
- Green salad
- Caesar salad
- Roasted vegetables
- Steamed broccoli
- Bruschetta
⭐ Tips for the Best Vegetable Lasagna
Don’t make the vegetables too watery.
Cook out excess moisture before assembling. This is one of the biggest secrets to avoiding watery lasagna.
Don’t overcook the vegetables.
They should be tender but still have some texture.
Use plenty of sauce.
Dry noodles need moisture while baking.
Don’t skip the resting time.
15–20 minutes makes a huge difference in how neatly the lasagna slices.
For extra cheesy lasagna:
Increase the mozzarella to about 3½ cups.
For a richer flavor:
Add a little fresh basil to the tomato sauce and ricotta mixture.
For extra vegetables:
You can add broccoli, eggplant, corn, peas, or roasted red peppers.
