🌯 Weeknight Ranch Chicken & Jalapeño Wraps

A quick, creamy, slightly spicy chicken wrap that comes together in about 30 minutes. Juicy seasoned chicken is coated in ranch, paired with crunchy jalapeños and fresh vegetables, then wrapped in a warm tortilla with melted cheese. Perfect for a busy weeknight dinner.

🛒 Ingredients — 4 wraps

For the chicken:

  • 500 g (about 1 lb) boneless, skinless chicken breast or thighs
  • 2 tbsp ranch dressing
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp chili powder or cayenne, optional

For the wraps:

  • 4 large flour tortillas
  • ½ cup ranch dressing
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1–2 fresh jalapeños, thinly sliced
  • 1 cup shredded lettuce
  • 1 tomato, diced
  • ½ small red onion, thinly sliced
  • ½ cup corn, optional
  • ½ cup sliced avocado, optional
  • ¼ cup chopped fresh cilantro, optional
  • Lime wedges, for serving

👩‍🍳 Step-by-step

1. Prepare the chicken — 5 minutes

Cut the chicken into small bite-sized pieces. This helps it cook quickly and makes the wrap easier to eat.

Place the chicken in a bowl and add:

  • ranch dressing
  • olive oil
  • garlic powder
  • paprika
  • onion powder
  • black pepper
  • salt
  • chili powder or cayenne if using

Mix thoroughly until every piece of chicken is coated.

2. Cook the chicken — 8–10 minutes

Heat a large skillet over medium-high heat.

Add the seasoned chicken in a single layer. Cook for about 4–5 minutes, then stir and continue cooking for another 4–5 minutes, until the chicken is browned and cooked through.

The chicken should reach 74°C / 165°F in the center.

Tip: Don’t overcrowd the pan. If necessary, cook the chicken in two batches so it browns instead of steaming.

3. Prepare the vegetables — while the chicken cooks

While the chicken is cooking, prepare your toppings.

Shred the lettuce, dice the tomato, slice the onion, and thinly slice the jalapeños.

For a milder wrap, remove the jalapeño seeds and white membranes. For more heat, leave some seeds in.

4. Warm the tortillas — 1–2 minutes

Heat each tortilla in a dry skillet for about 15–20 seconds per side, just until soft and flexible.

You can also microwave them for about 10–15 seconds, covered with a slightly damp paper towel.

5. Build the wraps — 3 minutes

Lay a warm tortilla flat.

Spread about 1–2 tablespoons of ranch dressing down the center.

Add:

  1. A handful of shredded lettuce
  2. Several spoonfuls of ranch chicken
  3. Shredded cheese
  4. Tomato
  5. Red onion
  6. Jalapeños
  7. Corn or avocado, if using
  8. A little cilantro, if desired

Don’t overfill the tortilla, or it will be difficult to roll.

6. Add extra cheese and crisp it — optional

For an especially delicious finish, place the assembled wrap seam-side down in a dry skillet over medium heat.

Cook for 1–2 minutes per side, until the tortilla is golden and crisp and the cheese inside has melted.

7. Roll the wrap

Fold the left and right sides toward the center.

Then fold the bottom edge over the filling and tightly roll the tortilla upward, keeping the filling tucked inside.

Slice diagonally in half.

🌶️ Easy spicy ranch sauce

For extra flavor, mix:

  • ½ cup ranch dressing
  • 1 tbsp finely chopped jalapeño
  • 1 tsp lime juice
  • ¼ tsp chili powder
  • A pinch of garlic powder

Drizzle it inside the wrap or serve it on the side.

⏱️ 30-minute schedule

  • 0–5 min: Cut and season chicken
  • 5–15 min: Cook chicken
  • 5–15 min: Chop vegetables
  • 15–18 min: Warm tortillas
  • 18–23 min: Assemble wraps
  • 23–27 min: Toast wraps
  • 27–30 min: Slice, garnish, and serve

🍽️ Serving idea

Serve the wraps with crispy fries, potato wedges, coleslaw, or a simple cucumber salad. A squeeze of fresh lime over the finished wrap adds a nice contrast to the creamy ranch.

Best tip: If you’re making these ahead, keep the lettuce and tomatoes separate until serving so the tortillas don’t become soggy.
