🛒 Ingredients

For the Chicken Filling

  • 500 g boneless chicken, cut into small pieces or shredded
  • 2 tbsp cooking oil or butter
  • 1 medium onion, finely chopped
  • 1 tbsp minced garlic
  • 1 small capsicum, finely chopped
  • 1 tsp salt, or to taste
  • ½ tsp black pepper
  • ½ tsp red chili flakes
  • ½ tsp paprika or red chili powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • 2 tbsp tomato paste or ½ cup tomato sauce
  • 2–3 tbsp water, if needed

For the Creamy White Sauce

  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 3 cups milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp dried oregano
  • ½ cup grated mozzarella or cheddar cheese
  • 2 tbsp cream — optional, for extra richness

For Assembly

  • 9–12 lasagna sheets
  • 1½–2 cups shredded mozzarella cheese
  • ½ cup cheddar cheese
  • 2–3 tbsp Parmesan cheese, optional
  • A little dried oregano or chili flakes for topping

Step 1: Prepare the Chicken

  1. Heat 2 tbsp oil or butter in a large pan over medium heat.
  2. Add the chopped onion.
  3. Cook for about 2–3 minutes, until the onion becomes soft and translucent.
  4. Add the minced garlic and cook for another 30–60 seconds.
  5. Add the chicken pieces.
  6. Cook for about 5–7 minutes, stirring occasionally, until the chicken is cooked through.
  7. Add:
    • Salt
    • Black pepper
    • Red chili flakes
    • Paprika/red chili powder
    • Oregano
    • Basil
  8. Mix everything well.
  9. Add the chopped capsicum and cook for another 2 minutes.
  10. Add tomato paste or tomato sauce.
  11. Mix well and cook for 2–3 minutes.
  12. If the mixture looks too dry, add a few tablespoons of water.
  13. Turn off the heat and set the chicken aside.

Tip: Don’t make the chicken filling too watery. A thick filling will make the lasagna much easier to layer.


🥛 Step 2: Make the Creamy White Sauce

  1. Place a saucepan over low-medium heat.
  2. Add 4 tbsp butter and allow it to melt.
  3. Add 4 tbsp all-purpose flour.
  4. Whisk continuously for about 1–2 minutes.

Don’t let the flour become dark brown. You want a light-colored sauce.

  1. Gradually add the 3 cups of milk, a little at a time.
  2. Whisk constantly while adding the milk to prevent lumps.
  3. Continue cooking and stirring for about 5–7 minutes.
  4. The sauce will gradually become thick and creamy.
  5. Add:
    • Salt
    • Black pepper
    • Garlic powder
    • Oregano
  6. Add ½ cup grated cheese and stir until melted.
  7. Add 2 tbsp cream, if using.
  8. Mix until smooth.

What consistency should it be?

The white sauce should be thick but pourable, similar to a creamy soup or custard.

If it’s too thick, add a little more milk.

If it’s too thin, cook it for another 1–2 minutes while stirring.

Important: Don’t make the sauce extremely thick because it will thicken further while baking.


🍝 Step 3: Cook the Lasagna Sheets

Follow the instructions on your lasagna package.

If your sheets require boiling:

  1. Bring a large pot of salted water to a boil.
  2. Add the lasagna sheets.
  3. Cook according to the package instructions, usually around 7–10 minutes.
  4. Drain carefully.
  5. Lay the sheets separately on a plate or tray so they don’t stick together.

If you’re using oven-ready/no-boil lasagna sheets, you can skip boiling them.


🧀 Step 4: Assemble the Lasagna

Preheat your oven to 180°C / 350°F.

Use approximately a 9 × 13-inch baking dish.

First layer

Spread a thin layer of white sauce across the bottom of the dish.

This prevents the pasta from sticking.

Second layer

Place a layer of lasagna sheets over the sauce.

Try not to overlap them too much.

Third layer

Spread approximately ⅓ of the chicken filling evenly over the pasta.

Fourth layer

Pour some creamy white sauce over the chicken.

Spread it gently so the chicken is covered.

Fifth layer

Sprinkle some mozzarella and cheddar cheese.

Repeat

Continue layering:

Lasagna sheets → chicken → white sauce → cheese

Repeat until you’ve used the ingredients.


🧀 Step 5: Finish the Top

For the final layer:

  1. Place the last lasagna sheets on top.
  2. Cover generously with the remaining white sauce.
  3. Sprinkle plenty of mozzarella cheese.
  4. Add cheddar and Parmesan if desired.
  5. Sprinkle a little oregano and chili flakes over the top.

The top should be completely covered with sauce and cheese so the pasta doesn’t dry out.


🔥 Step 6: Bake

Place the assembled lasagna into your preheated oven.

Baking temperature:

180°C / 350°F

Baking time:

30–40 minutes

Bake until:

  • The sauce is bubbling around the edges.
  • The cheese has completely melted.
  • The top is golden and slightly browned.

For a more golden top, switch to the broiler/grill setting for 2–3 minutes at the end.

⚠️ Watch it carefully during broiling because the cheese can burn quickly.


⏳ Step 7: Let It Rest

This step is very important!

Remove the lasagna from the oven and let it rest for 10–15 minutes before cutting.

If you cut it immediately, the layers may slide apart.

After resting, the sauce will settle and the lasagna will hold its shape much better.


🍽️ How to Serve

Cut the lasagna into squares and serve hot.

It goes especially well with:

  • Garlic bread
  • Fresh green salad
  • Coleslaw
  • Roasted vegetables
  • Creamy soup

For extra flavor, sprinkle a little oregano, parsley, or chili flakes over each serving.


⭐ Tips for Perfect Chicken Lasagna

1. Don’t make the chicken watery.
Excess liquid can make the lasagna soggy.

2. Keep the white sauce creamy.
It should be thick enough to coat the back of a spoon but still easy to spread.

3. Use enough cheese.
Mozzarella gives you that beautiful melted, stretchy topping, while cheddar adds stronger flavor.

4. Don’t skip the resting time.
Give the lasagna 10–15 minutes to set before slicing.

5. Season every component.
The chicken, white sauce, and cheese layers should each have enough seasoning.

6. Add vegetables if you like.
Mushrooms, spinach, corn, carrots, or broccoli can all work nicely in the chicken filling.

🌶️ For a Pakistani-style spicy version

Add ½–1 tsp red chili flakes, ½ tsp crushed black pepper, and a little green chili to the chicken filling. You can also add a pinch of tandoori masala for a more pronounced desi flavor.
