🍯🧄 Honey Garlic Chicken & Feta Stir-Fry

Ingredients
For the chicken
- 500 g boneless, skinless chicken breast or thighs
- 2 tbsp cornstarch
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 tbsp cooking oil
For the stir-fry
- 1 medium onion, sliced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 medium carrot, thinly sliced
- 3–4 cloves garlic, finely minced
- 1 tsp grated fresh ginger
- 100–150 g feta cheese, crumbled
- 2 spring onions, sliced
- 1 tsp sesame seeds, optional
For the honey-garlic sauce
- 4 tbsp honey
- 3 tbsp soy sauce
- 1 tbsp rice vinegar or lemon juice
- 1 tbsp ketchup
- 1 tbsp water
- 1 tsp sesame oil, optional
- ½ tsp red chili flakes, optional
- 1 tsp cornstarch
Step 1: Prepare the chicken
Cut the chicken into small bite-sized pieces, roughly 2–3 cm each.
Put the chicken in a bowl and add:
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 2 tbsp cornstarch
Toss everything together until the chicken is evenly coated.
Why cornstarch?
It gives the chicken a light coating that becomes golden and slightly crispy when fried. It also helps the sauce cling beautifully to the chicken.
Step 2: Make the honey-garlic sauce
In a small bowl, combine:
- 4 tbsp honey
- 3 tbsp soy sauce
- 1 tbsp rice vinegar or lemon juice
- 1 tbsp ketchup
- 1 tbsp water
- 1 tsp sesame oil, if using
- ½ tsp chili flakes, if you like some heat
- 1 tsp cornstarch
Whisk until the cornstarch completely dissolves.
Set the sauce aside.
Tip: Taste a tiny bit before cooking. If you want it sweeter, add a little more honey. For more tang, add a little extra vinegar or lemon juice.
Step 3: Cook the chicken
Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
Once hot, add the chicken pieces in a single layer.
Don’t overcrowd the pan. If necessary, cook the chicken in two batches.
Cook for approximately 3–4 minutes on the first side, then turn the pieces and cook another 3–4 minutes, until golden brown and cooked through.
Remove the chicken from the pan and place it on a plate.
Important: Don’t worry if there are browned bits left in the pan. That’s flavor!
Step 4: Stir-fry the vegetables
Using the same pan, add the sliced onion, bell pepper, broccoli, and carrot.
If the pan looks dry, add another small splash of oil.
Stir-fry over medium-high heat for about 4–5 minutes.
You want the vegetables to become:
- slightly softened
- colorful
- still a little crisp
Don’t cook them until completely soft. The slight crunch is what makes this taste like a proper stir-fry.
Step 5: Add the garlic and ginger
Push the vegetables toward the sides of the pan.
Add:
- 3–4 minced garlic cloves
- 1 tsp grated ginger
Cook for about 30–60 seconds, stirring constantly.
Be careful not to burn the garlic—it can become bitter.
Step 6: Bring everything together
Return the cooked chicken to the pan with the vegetables.
Give your honey-garlic sauce another quick stir because the cornstarch may have settled at the bottom.
Pour the sauce into the pan.
Immediately toss everything together.
Cook for approximately 2–3 minutes.
The sauce will start bubbling and become thick, shiny, and sticky, coating every piece of chicken and vegetable.
This is the moment when the dish really comes together. 🍯
Step 7: Add the feta
Turn the heat down to low.
Add about 100–150 g crumbled feta.
Gently toss everything together, but don’t completely melt the feta.
You want some feta pieces to remain intact so you get little bursts of creamy, salty flavor alongside the sweet honey-garlic chicken.
For an even better result, reserve a little feta for sprinkling over the top.
Step 8: Finish the stir-fry
Turn off the heat.
Sprinkle over:
- sliced spring onions
- sesame seeds
- a little extra chili flakes, if desired
- remaining feta
You can also squeeze a little fresh lemon juice over the top. The acidity cuts through the sweetness of the honey and richness of the feta.
🍚 How to Serve It
This is fantastic served over:
- steamed jasmine rice
- basmati rice
- fried rice
- noodles
- quinoa
For a lighter meal, serve it over cauliflower rice or simply eat it as-is.
My favorite combination
Jasmine rice + honey garlic chicken + crunchy vegetables + feta + spring onions + sesame seeds + a squeeze of lemon.
The rice soaks up all that sticky honey-garlic sauce. 🤌
⭐ Tips for making it taste better than takeout
1. Use chicken thighs if you want extra juicy chicken.
Chicken breast works perfectly, but thighs are more forgiving and stay tender.
2. Get the pan really hot.
A hot skillet gives the chicken those delicious browned edges.
3. Don’t overcrowd the chicken.
Crowding causes it to steam instead of becoming golden and crispy.
4. Don’t add the garlic too early.
Garlic burns quickly. Add it after the vegetables have started cooking.
5. Add feta at the end.
You want creamy feta pieces—not a completely melted cheese sauce.
6. Balance the sweetness.
If the honey sauce tastes too sweet, add another teaspoon of lemon juice or vinegar.
7. Want it spicy?
Add ½–1 tsp chili flakes to the sauce, or drizzle with chili oil when serving.
🌶️ Optional upgrade
For an even more restaurant-style finish, mix 1 tbsp mayonnaise + 1 tsp sriracha + 1 tsp lemon juice and drizzle a little over the finished dish. The cool, spicy creaminess works surprisingly well with the honey-garlic sauce and feta.
